Low-Carb Zuchinni Pasta and Meatballs

This has definitely been a go-to recipe for us and I can’t believe I didn’t try this sooner! I am so excited that Publix has started to make spiraled veggies and was a little surprised at how easy this is on a busy night! The boys even loved it which is rare with us trying all the new healthy recipes lately!! So here it is, our zoodles pasta recipe:

Makes 2 servings double for a family of 4:
Prep Time: 10 minutes (about 20 if you are making your own sauce)
Cook time: 20 minutes

Zoodles and Sauce:
Large Drizzle of Olive Oil
2 cups Zucchini Spiraled or 1 container from Publix
1 cup pasta sauce (I love this one here that you can make your own) or just look at the labels for an organic pasta sauce made with olive oil like this one here (GIA RUSSA PASTA SAUCE TOMATO & BASIL 24 OZ) They sell it at Publix also.

1 lb Grassfed Ground Beef 90/10
1 egg
1 package of McCormick Grill Mates Steakhouse Burgers Sauce Mix Ins
McCormick Grill Mates Sauce Mix-Ins, Montreal Steak, 2.83 oz

Preheat Oven to 350 degrees F. Mix meat,egg, and sauce mix-in together in large bowl and make sure it is mixed well. Roll into 1 inch balls (makes about 20-25). Cook on 350 for 20-25 minutes (oven times vary, cut into one meatball and I like mine to have no pink in the center). Preheat skillet with large drizzle of olive oil in pan. If you are preparing sauce yourself go ahead and cut tomatoes and season and start to cook, if not you can just start heating the sauce on low. Place zuchinni noodles in skillet after it is preheated and cook until tender (about 5-7 minutes) . Add all together and yum! Delicious meal in under 30 minutes!
